Easy Tofu Scramble

Tofu scramble is one of my favourite savoury breakfasts. I love it on toast, in a breakfast burrito, or as part of a good ol’ big vegan breakfast bowl. It’s SO incredibly simple and quick to make and packed full of protein too.

 

Easy Tofu Scramble

Prep time: Less than 5 minutes

Total time: 5 minutes

yields: 2 servings

Ingredients:

* 1 block of tofu

* 1 1/2 tsp turmeric powder

* 1 tbsp olive oil

* Salt and pepper to taste

* 1/2 tsp garlic powder (optional)

* 1/4-1/2 cup nutritional yeast

Method:
1. Start by heating the olive in a pan over a medium heat.

2. Using your hands (or a wooden spoon), crumble the tofu into the pan and stir.

3. Add in the turmeric powder, garlic powder (if using) and nutritional yeast. Add pepper and salt to taste.

4. Cook for a further 2 minutes making sure the tofu is well coated in the seasoning. Keep stirring during this time to avoid the tofu from sticking to the pan.

5. Take off the heat and serve with your favourite brunch companions!
